JailHouse Brewery beer pairing dinner
I was excited to attend this dinner at Meehan's downtown location after getting a glimpe of the inspired menu Chef Jordan Wakefield had created.
It did not disappoint.
All About Peaches, and boy was it ever. I am not a beer afficianado so I won't be commenting on the brews. This is all about the food.
standard Medjool date wrapped in benton's ham and of course stuffed with goat cheese. Sweetgrass dairy's chevre which is always a win.
Bourbon Poached Peach Salad
Wild shrimp anchored this dish. Soft but satisfying flavors as this is still a starter course. Wakefield knows not to blow out the palette early on. Pecans lightly kissed with spice that almost hynotically complimented a silky peach and ginger vinagrette. Crisp bitter endive brought it all together for a cool refreshing start.
Sonoma County Foie Gras
The dish that lured me in. Being a chef I appreciate the meal at this point. It's incredibly inspired, balanced and beyond satisfying. Wakefield put a 45 minute smoke on the peach. It had a almost bacon like flavor while still retaining the peach cool fleshy summer texture we all love so much about them. Once that smoke hit my tongue along with the rich silky foie gras I felt a loss for words. Nothing else existed around me as my sense of taste was being taken over by this hypnotic flavor. Finally a dish that WOW's me. Thank you!
Peach Smoked Niman Ranch Pork Belly
There was a fantastic carmelization on this entree. Lean as far as belly goes and it was nestled in incredibly flavored Ansen mills blue cheese grits to create a very elegant comfort food. Complete with bright local collards that didn't have the personality cooked out of them. Pork and peach are a match made in Georgia heaven and Wakefield did them both justice. Perfect portion and perfect seasoning. I ate every bite and even a few bites from the plate next to me. Nevermind I was full to capacity. That doesn't matter when food is this memorable. Another dish that showed quiet restraint.
Slap yo Mama Peach Cobbler
Braised and fresh peaches on this plate, standard cobbler crust. Gorgeous lacquered peach half. Fresh peach sorbet and vanilla ice cream finished it. Logical finish to this very satisfying dinner.
I can't wait for the next pairing dinner. I am hooked.
